These marshmallows are absolutely delicious! Sprinkle them with our sugar pebbles, dip them in chocolate, freeze dry them, or add them to your rice crispy treat recipe! The possibilities are endless.
INGREDIENTS:
- 30 g Grass Fed Gelatin Powder
- 240 g Chilled Water
- 405 g Organic Cane Sugar
- ¼ TSP Sea Salt
- 2 TSP Vanilla Extract
- ¼ Cup Organic Powdered Sugar (for dusting and to prevent sticking)
INSTRUCTIONS:
1. Begin by greasing a 9x9-inch baking pan with avocado oil, then lightly dust all sides with powdered sugar.
2. In the bowl of a stand mixer, combine the cold water and powdered gelatin, mixing until well blended. Allow the mixture to sit for a few minutes.
3. In a medium saucepan, combine the granulated sugar, sea salt, and water. Stir to mix all the ingredients together.
4. Place the pot over medium-high heat and bring the mixture to a gentle boil. Continue boiling until the temperature reaches 240°F, then remove the pot from the heat. 5. Using the whisk attachment on your stand mixer, start whisking the gelatin mixture on low speed. Gradually pour the hot syrup mixture down the side of the bowl while increasing the speed to high.
6. Once you reach high speed, continue to stream in the syrup until it’s all incorporated. Whisk for an additional 5 minutes.
7. Before detaching the bowl from the stand mixer, add the vanilla extract and mix until fully combined. The final mixture should be fluffy, white, and increase in volume by about three times compared to the original mixture.
8. Carefully remove the bowl from the stand mixer and promptly pour the mixture into the prepared baking dish. Use a silicone spatula or your hands to spread it evenly.
9. Leave the mixture uncovered on the counter for a few hours to set. Cut the marshmallows and dust with powdered sugar.
