List of Ingredients:
- 2 and 1/8 cups (300g) of all-purpose flour
- 1/2 teaspoon of baking soda
- 1/2 teaspoon of fine salt
- 1 cup (227g) of unsalted butter, softened at room temperature
- 2/3 cup (130g) of granulated sugar
- 3/4 cup (85g) of powdered sugar
- 1 large egg
- 1 teaspoon of pure vanilla extract
- 1/2 cup of sprinkles (or up to 2/3 cup)

Instructions:
1. Preheat the oven to 350°F/180°C and line 2 baking sheets with parchment paper.
2. In a medium bowl, sift together the flour, baking soda, and salt. Set aside.
3. Using a mixer bowl fitted with the paddle attachment, beat the softened butter, granulated sugar, and powdered sugar on medium-low speed for 4 minutes.
4. Beat in the egg and vanilla extract until just combined.
5. Add the flour mixture to the wet ingredients and mix until just combined. Stir in the sprinkles, being careful not to overmix.
6. Shape the dough into balls, either 1.5 tablespoons each or using a cookie scoop, and place them on the prepared cookie sheets, spacing them 2 inches apart.
7. Bake for 11-12 minutes until the edges of the cookies just begin to brown, while the center remains soft. Avoid overbaking.
8. Allow the cookies to cool on the baking sheet for 5-10 minutes before transferring them gently to a wire rack to cool completely.
